Delicate caps and mild flavor.  Saute by themselves or with onions and peppers in butter or olive oil.  Season with salt & pepper or your favorite seasoning mix.  Use the sauted mixture as a topping for steak, chicken, sausages, brats, eggs, or more.  Oysters are also a great addition to pasta dishes for added depth to the flavor and texture.
